It makes him more likeable, more human, more personable. More than anything, it shows he has a sense of humor. This makes you like him more, and if you like him more then Celeste is going to like him more too. Celeste needs somebody to like so that at the end of the movie you don't feel totally sad for her when Jesse goes with that other chick. It's not really a sad movie. You want to be left with a sense of happiness and with Paul being an OK guy with a sense of humor, you have that chance. Pretty sure he was gonna say something along the lines of, "I thought you were just kidding," or "I thought you were just gonna make a joke to get rid of me."

OMG Kalen - spoilers much? Gah! I thought you were just joking - was what he was he was going to say. I thought you were just another pretty girl at the gym - might have been what he was thinking.

If someone were cynical about my job I would be offended. By doing so, Paul makes it harder for himself to win her affection. I haven't seen the movie but I guess that he has to work a bit harder to win her. Conflict makes the story interesting.
