Great write up. The previous link said "Final Crusade" though.. Didn't know if that was a pun or merely a brain fart ;) Another great father son moment is at the end once Elsa falls into the pit and Indy falls into the same trappings (trying to reach the grail) and Henry Sr. calls him "Indiana" for the first time. One thing I've found interesting is that sometimes you have to slightly alter or suspend character traits for a gag or any other kind of impactful moment. For instance, the scene RIGHT before the Nazi's getting shot is Indy getting cracked over the head with a vase, and Henry saying "Junior??" and Indy replies with a prompt-to-his-feet "Yes sir!" as if years of obedient conditioning lead him to this automatic reply. But when we look back on the first father son moments of Indy and the Cross of Coronado, his father is very disinterested in him, and we do not see this automatic militant reply from him when he asks him to count in Greek. Nor do we see get this impression in the blimp scene you outlined. The audience doesn't care though, because the gag works, and it's funny. Just an interesting note.. One of the many rule breaks that come down to the weight of the joke/moment vs the reality of the scenario/character.
