Princess Leia: Why, you stuck up, half-witted, scruffy-looking Nerf herder.

Han Solo: Who's scruffy-looking?

General Tagge: What of the Rebellion? If the Rebels have obtained a complete technical reading of this station, it is possible, however unlikely, they might find a weakness and exploit it.
Darth Vader: The plans you refer to will soon be back in our hands.
Admiral Motti: Any attack made by the Rebels against this station would be a useless gesture, no matter what technical data they have obtained. This station is now the ultimate power in the universe! I suggest we use it!
Darth Vader: Don't be too proud of this technological terror you've constructed. The ability to destroy a planet is insignificant next to the potential of the Force.
Admiral Motti: Don't try to frighten us with your sorcerous ways, Lord Vader. Your sad devotion to that ancient Jedi religion has not helped you conjure up the stolen data tapes, or given you enough clairvoyance to find the rebels' hidden fortress...
[Vader makes a pinching motion and Motti starts choking]
Darth Vader: I find your lack of faith disturbing.
Governor Tarkin: Enough of this! Vader, release him!
Darth Vader: As you wish.
[He does]

Luke: Got 'im! I got 'im!

Han Solo: Great, kid. Don't get cocky.

Before the "boring conversation" tag is also awesome "We're okay, everything's fine down here, uh ... how are you?"

the most famous might be what Harrison Ford said to Lucas during the shooting of the movie ... the actors didn't think much of Lucas's dialogue and Ford told him, "George, maybe you can write this shit but you sure as hell can't say it." or words to that effect ...

I love the dialogue play between C-3PO and R2-D2; even though R2 doesn't speak English, we know pretty much what he's saying.

THREEPIO
How did I get into this mess? I really don't know how. We seem to be made to suffer. It's our lot in life.

Artoo answers with beeping sounds.
THREEPIO
I've got to rest before I fall apart. My joints are almost frozen.

Artoo continues to respond with beeping sounds.
THREEPIO
What a desolate place this is.

Suddenly Artoo whistles, makes a sharp right turn and starts off in the direction of the rocky desert mesas.
THREEPIO
Where are you going?

A stream of electronic noises pours forth from the small robot.
THREEPIO
Well, I'm not going that way. It's
much too rocky. This way is much
easier.

Artoo counters with a long whistle.
THREEPIO
What makes you think there are settlements over there?

Artoo continues to make beeping sounds.

THREEPIO
Don't get technical with me.

Artoo continues to make beeping sounds.

THREEPIO
What mission? What are you talking
about? I've had just about enough
of you! Go that way! You'll be
malfunctioning within a day, you
nearsighted scrap pile!

Threepio gives the little robot a kick and starts off in the direction of the vast dune sea.
THREEPIO
And don't let me catch you following me begging for help, because you won't get it.

Artoo's reply is a rather rude sound. He turns and trudges
off in the direction of the towering mesas.
THREEPIO
No more adventures. I'm not
going that way.

Artoo beeps to himself as he makes his way toward the distant
mountains.

Yeah, updating my post because Josh is right--that whole scene deserves to be in there. Here's the dialogue.

HAN: Everything's under control, situation normal.

INTERCOM VOICE: What happened?

HAN: Uh...had a slight weapons malfunction but uh, everything's perfectly alright now, we're fine, we're all fine here, thank you--how are you?

INTERCOM VOICE: We're sending a squad up.

HAN: Uhhh--uh--negative, negative. We have a reactor leak here, now, give us a few minutes to lock it down. Uh, large leak--very dangerous.

INTERCOM VOICE: Who is this? What's your operating number?

HAN: Uh...

SHOOTS intercom.

HAN: Boring conversation anyway...LUKE!! We're gonna have company!!

Han Solo: Hokey religions and ancient weapons are no match for a good blaster at your side, kid.
Luke: You don't believe in the Force, do you?
Han Solo: Kid, I've flown from one side of this galaxy to the other, and I've seen a lot of strange stuff, but I've never seen *anything* to make me believe that there's one all-powerful Force controlling everything. 'Cause no mystical energy field controls *my* destiny. It's all a lot of simple tricks and nonsense.
