As for the screen test: it looks like it done was much later in the production schedule since a lot of the set seems already constructed. Is that normal?

Scott builds sets like that for auditions. He did that for Blade Runner as well. FYI: The feature length docs on both the Alien box set and the Blade Runner set shows a lot more audition material.
